WHY I MADE THIS APPLESAUCE BREAD
If you’ve been following salt n sprinkles for while (or, if you’re brand new, welcome!) then you know that I’m known for a few recipes: my Rosemary Focaccia Muffins, my Cauliflower Chickpea Wraps, and My Mom’s Banana Bread recipe. I’m such a fan of all of these viral recipes, but my mom’s banana bread is the one that I want to make on a cozy rainy day weekend, which is exactly what we were dealing with in my city recently.
Except, I didn’t have any ripe bananas. I had six very green, very much not-ready-to-be-banana-bread bananas on the counter, but I wanted some banana bread. I got to thinking about what I could use in place of bananas, and applesauce quickly came to mind.
So, I got to testing, and came up with this moist, lightly sweet, and tender applesauce bread recipe that I’m super proud of! This recipe also has a pecan streusel topping and inner layer because you know I can’t just make a regular applesauce bread—I always have to do something a little bit extra.
I made this applesauce bread with gluten free flour because I’m in my gluten free era, but I’m positive that you can make this with regular all purpose flour, too. Give it a try!
MY APPLESAUCE BREAD RECIPE
The full recipe for this gluten free (or, not gluten free, it’s up to you!) applesauce bread is below, but here’s the gist of it:
Prepare the pecan cinnamon streusel by pulsing all ingredients together in a food processor.
Cream the butter and sugar together in a large bowl. Add the applesauce.
Add the egg and vanilla.
Sift the gluten free flour, baking soda, baking powder and salt into the batter. Mix until smooth.
Pour half of the batter into the loaf pan. Sprinkle half of the pecan cinnamon streusel on top of the batter.
Pour the remaining batter into the pan and sprinkle the remaining streusel on top of the bread batter.
Bake the applesauce bread for 45-55 minutes.

HOW LONG DOES THIS APPLESAUCE BREAD TAKE TO MAKE?
Start to finish, you’ll get to enjoy this gluten free applesauce bread about an hour after you make it. The prep time for this bread takes about 20 minutes, while the bake time is about 50 minutes, which is 1 hr and 10 minutes in total.
WHAT TYPE OF GLUTEN FREE FLOUR SHOULD I USE?
I used King Arthur's Measure-for-Measure Gluten Free Flour for this recipe, and I love it!. Your mileage may vary depending on which type of gluten free flour you use. Just make sure it has xanthan gum.
HOW TO STORE THIS APPLESAUCE BREAD?
Store any leftover bread in an airtight container at room temperature. Keep away from direct sunlight and it will stay fresh for about 2-3 days.
Or, you can freeze the bread and store it in the freezer indefinitely. Thaw at room temperature overnight before enjoying.
