Pour in the boiling water and blend until the mixture is very smooth and creamy.
Transfer the mixture to a glass bowl and refrigerate for 2 hours, uncovered.
Cover the bowl and refrigerate for an additional 4 hours, or overnight, until cheese is hardened.

Ingredients
- 1/2 c raw cashews, soaked in water overnight
- 1/4 c tapioca flour
- 1 tbsp carrageenan
- 1/4 c coconut oil
- 2 tbsp lemon juice
- 2 tbsp nutritional yeast
- 1 tsp salt
- 1 1/2 c boiling water
Instructions
- Place all ingredients in a food processor (except for the water). Blend to combine.
- Next, pour in the boiling water and blend until the mixture is very smooth and creamy.
- Transfer the mixture to a glass bowl and refrigerate for 2 hours, uncovered.
- Cover the bowl and refrigerate for an additional 4 hours, or overnight, until cheese is hardened.
