WHY I MADE THESE EGGNOG MARSHMALLOWS

This may come as a surprise, but to be honest with you—I’m not a huge fan of eggnog! Eggnog is just not a drink that I typically reach for when the holidays come around (I’m more of a Martinelli’s sparkling cider kind of girl). Store bought eggnog has always tasted super thick and super sweet to me. Plus, something about drinking a drink with raw eggs in it just gave me an ick feeling.

That is until I tried some homemade eggnog. I didn’t make it, of course, but a few holidays ago I was at a Friendsgiving and a trusted friend of mine made coquito, which is definitely different from eggnog (and in my option so much better). It was delicious. It was love at first sip. And it made me not hate eggnog so much. And because I love to try new things with food I was thinking it would be fun to make a whole different food out of eggnog.

I always like to challenge myself to find a way to enjoy foods that I typically don’t like, and I found that using eggnog as an ingredient in foods is so much better than drinking it by itself. I already love my Homemade Honey Marshmallow recipe and was itching to make a fresh batch for the holidays so I could enjoy it with some hot cocoa.

And then the thought hit me. Honey. Eggnog. Marshmallow. Yes! And that’s how I came around to making this Eggnog Marshmallow recipe.

MY EGGNOG MARSHMALLOW RECIPE

The full recipe for my eggnog marshmallows are below–it’s super easy! But here’s the gist of it:

  • Fit a stand mixer with the whisk attachment. Pour in 1/2 c warm water and gelatin, stirring until the gelatin dissolves.

  • In a medium pot, combine the honey, eggnog, vanilla, and salt. Clip a candy thermometer to the side of the pot.

  • Simmer the mixture until it reaches 240F. Immediately remove the pot from heat when this happens.

  • Slowly pour the eggnog mixture into the stand mixer. Beat the mixture for about 10 minutes, until soft peaks begin to form. The mixture will transform from a liquid to a soft, fluffy cloud of goodness.

  • Pour the fluff into a prepared pan. Smooth the top.

  • Allow the mixture to sit at room temperature for at least 4 hours.

  • Cut the marshmallows into squares, or use a cookie cutter to make fun shapes!

EGGNOG MARSHMALLOW KEY INGREDIENTS

  • unflavored gelatin (or: vegan gelatin if vegan)

  • honey (or: maple syrup or agave syrup, if vegan)

  • eggnog

  • vanilla extract

  • cornstarch, for dusting

HOW LONG DO THESE HOMEMADE MARSHMALLOWS TAKE TO MAKE?

Start to finish, these eggnog marshmallows take about 25 minutes to make:

  • Prep time: 10 minutes

  • Cook time: 15 minutes

However, the marshmallow fluff will need to sit for at least 4 hours to set. So plan to enjoy these eggnog marshmallows at least four afters you make them.

HOW TO STORE THESE HOMEMADE MARSHMALLOWS?

Store in an airtight container for up to 1 week, at room temperature. Do not store in the fridge, otherwise they will dry out.

EGGNOG MARSHMALLOW FAQ

1.Do I need any special equipment?

While the ingredients needed to make homemade marshmallows is super simple, you will need special equipment in order to make these marshmallows at home.

You’re gonna need a candy thermometer for this marshmallow recipe. Don’t attempt this recipe without one! That’s because the eggnog-caramel mixture needs to reach exactly 240 F, which is difficult to eyeball without a thermometer.

You’re also going to make your life a whole lot easier by using a stand mixer when it’s time to whip up the marshmallow mixture. My KitchenAid stand mixer is one of my favorite kitchen appliances of all time.

2. Is this recipe vegan?

No, but it can be! I’m not vegan, so I used honey as the sweetener for my homemade eggnog marshmallow recipe, but you can certainly use maple syrup or even agave syrup if you prefer.

Gelatin is also used in this recipe. It’s what gives marshmallows their bouncy, pillowy texture. If you’re vegan, there are vegan gelatin alternatives out there like agar agar, however I have not experimented with them for this recipe. If you choose to use it for your recipe, let me know how it turns out!

Also, be sure to check the ingredients of the eggnog that you choose to use for this recipe, as the majority of them will contain dairy. There are plenty of dairy-free eggnog alternatives available on the market how, however.

3. Is this recipe gluten free?

Yes, it is! Just make sure you check the ingredients of the eggnog you use for this recipe to make sure it is 100% gluten free as well.

Eggnog Marshmallows

Homemade eggnog marshmallows pair so perfectly with holiday hot chocolate! Making marshmallows at home can seem intimidating, but it’s a lot easier than you think. This recipe shows you how to make homemade marshmallows from scratch. It's way better than store bought!

Ingredients

  • 1/2 c warm water
  • 3 tbsp unflavored gelatin (or: vegan gelatin if vegan)
  • 1/2 c honey (or: maple syrup or agave syrup, if vegan)
  • 1/2 c eggnog
  • 1 tbsp vanilla extract
  • pinch of salt
  • 1/4 c cornstarch, for dusting

Instructions

  1. Line an 8x8 pan with parchment paper, and lightly dust the insides with the cornstarch so the marshmallows won't stick to the paper. Set aside.
  2. Fit a stand mixer with the whisk attachment. Pour in 1/2 c warm water and the gelatin, stirring them together until the gelatin dissolves.
  3. In a medium pan over medium heat, combine the honey, eggnog, vanilla, and salt. Stir together briefly, and let the mixture simmer. Clip your candy thermometer to the side of the pan, making sure the bottom is submerged in the liquid so it can accurately read the temperature.
  4. Simmer the mixture until it reaches 240F. You can turn up the heat to medium-high or high if you need to, but do this gradually so that the mixture does not pass 240F. Immediately remove the pan from heat when this happens.
  5. Turn the stand mixer to medium-high, and slowly pour the eggnog mixture into the stand mixer, being careful not to splash it. Beat the mixture for about 10 minutes, until soft peaks begin to form. The mixture will transform from a liquid to a soft, fluffy cloud of goodness.
  6. Pour the soft marshmallow fluff into the prepared pan. Spread it to fit the pan using an offset knife or your fingers: I find that it helps to slightly wet your knife or fingers first. Smooth the top.
  7. Allow the mixture to sit at room temperature for at least 4 hours.
  8. Lightly dust the top of the marshmallow with cornstarch, and cut the marshmallows into squares, or use a cookie cutter to make fun shapes!
  9. Store in an airtight container for up to 1 week.
