You’ll be enjoying this easy vegan toast recipe in about 30 minutes! Once you have all of the components cooked and prepared the first time, you can certainly store them separately in the fridge and then assemble your toast as a meal prep whenever the mood strikes. How do you make homemade sun dried tomato spread?
You can totally buy sun dried tomato spread in the grocery store, and I recommend doing so if you want to make this chickpea tzatziki toast very quickly. However, I happened to have a jar of sun dried tomatoes in my pantry, so I decided to make my own spread at home. You can do so too, if you prefer!
All you have to do is pour the sun dried tomatoes into a food processor and blend until it forms a paste. The sun dried tomatoes are already packed in oil which should give you a smooth spread, but you can certainly add a splash more of olive oil if you want a super creamy sun dried tomato spread.
I also like to throw in a couple of garlic cloves, a pinch of salt and Italian seasoning, a splash of apple cider vinegar, and a drizzle of honey to balance out the flavors. Taste and add whatever seasonings you prefer!
How do you make the vegan tzatziki?
This vegan tzatziki is completely dairy free, and comes together easily! To make this dairy free tzatziki, simply mix together the following:
cucumber (diced, peeled, and strained of water)
juice of 1/2 lemon
minced garlic
pinch of salt
3-4 tbsp warm water

How do you roast chickpeas?
Roasting chickpeas (or any bean) is a simple process that takes about 30 minutes.
First, drain and rinse your canned chickpeas and then toss them in a bit of olive oil and seasonings (I like to do a mix of cumin, coriander, salt, paprika, and Italian seasonings).
Spread the chickpeas on a greased baking sheet and cook in a 400 F oven for about 30 minutes, stirring halfway through.
Chickpea Tzatziki Toast
Ingredients
- 1 c tahini
- 1 cucumber, peeled, diced, and squeezed of water*
- juice of 1/2 lemon
- clove of garlic, minced
- 1/2 - 1 tsp salt
- 1 tbsp dill, chopped
- 3-4 tbsp water
- 2 cans of chickpeas (or any white bean), drained and rinsed
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- Pinches of cumin, coriander, paprika, and salt
- Whole grain toast
- Sun dried tomato spread**
- Roasted beans
- Vegan tzatziki
Instructions
- Mix all ingredients together in a small bowl, starting with the lesser amount of water. Add more or less water until the vegan tzatziki reaches the desired consistency.
- Preheat oven to 400 F. Line a baking sheet with foil and set aside.
- Toss the beans with the oil and seasonings, and spread onto the baking sheet in an even layer.
- Cook in the oven for 30 minutes, tossing halfway through.
- Remove from oven and allow to cool slightly.
- To assemble the toast, simply spread the sun dried tomato paste on top of the toast and top with the roasted beans. Drizzle the vegan tzatziki on top and enjoy! Makes about 4 toasts.
Notes
*To do this, simply sprinkle the diced cucumber with a little bit of salt and roll it inside of a paper towel. Give it a quick squeeze to ring out the water.
