Chocolate Hazelnut Oat Cups

These healthy chocolate oat cups are an easy no bake dessert made with oats, almonds, Greek yogurt, maple syrup, and dark chocolate! They’re a nutritious snack or treat that’s perfect for meal prep and satisfies chocolate cravings without any added refined sugar.

WHY I MADE THESE HEALTHY HAZELNUT OAT CUPS

I love dessert, I love chocolate, I love when my desserts come in the form of chocolate, but I also love when that dessert is healthy enough for me to enjoy as a snack. When I made these Chocolate Almond Butter Oat Cups a few years ago they were my go-to snack for a long time.

For some reason I kind of forgot about them (maybe it’s because I have over 200 recipes on here and my attention span is no better than my dog’s), but someone reminded me about them and then I got to thinking…

I should remake that recipe, but they would taste so good with hazelnuts, and what if instead of an almond butter center they were just straight oats and chocolate, kind of like a granola bar, but better. And that’s how we got here.

These Healthy Chocolate Hazelnut Oat Cups are made with simple ingredients like 70% dark chocolate, hazelnuts, rolled oats, and maple syrup. They’re such a good chocolate treat to snack on when you’ve got that craving, or you can enjoy a couple of them as an after dinner dessert.

MY HEALTHY HAZELNUT OAT CUPS RECIPE

Easy Oat Cups

  • Use a food processor to blend the oats and almonds together.
  • Add in the coconut oil, and maple syrup. The cereal will be crumbly.
  • Press the oat base into the cupcake liners.

Chocolate Ganache

  • Melt the chocolate chips in the microwave or using a double boiler until smooth. If using a microwave, stop to stir the chocolate chips every :15 seconds to prevent them from burning.
  • Cool the melted chocolate slightly, and then stir in the Greek yogurt. It will look chunky at first, but keep stirring until the mixture is uniform and smooth.
  • Spoon the Chocolate Ganache on top of the Oat Cups, smoothing the top so it’s flat.

Toppings

  • Sprinkle with chopped hazelnuts and sea salt, if using.
  • Pop the cupcake pan in the fridge and chill for about 1 hour.

  • Dark Chocolate Chips: I like using 70% dark chocolate chips for most of my chocolate recipes, because they’re not super sweet in the way that semi-sweet or bittersweet chocolate can be.
  • Greek yogurt: Makes our Chocolate Ganache super soft and spreadable, without being hard or crunchy.
  • Hazelnuts: For crunch, and great nutty flavor!

The magic of these no bake hazelnut cups is that they are so quick and easy to make! If you have a food processor or a blender, making these healthy oat cups at home will be a super simple task.

In total, these Healthy Hazelnut Oat Cups take about 1 hour and 20 minutes to make! And the majority of that time is just resting the oat cups in the fridge.

Ingredients

Easy Oat Cups

  • 1 c oats
  • 1/4 c almonds
  • 2 tbsp coconut oil melted
  • 2 tbsp maple syrup

Chocolate Ganache

  • 1 + 1/2 c dark chocolate chips
  • 3/4 c Greek yogurt

Toppings

  • 1/4 c hazelnuts chopped
  • Flakey sea salt optional

Instructions

Easy Oat Cups

  • Place 10 cupcake liners inside of a cupcake pan. Set aside.
  • Use a food processor to blend the oats and almonds together until it’s reduced to a coarse cereal.
  • Add in the coconut oil, and maple syrup. Pulse again until mixed. The cereal will be crumbly and won’t stick together entirely. That’s ok.
  • Press 1 tbsp of the oat base into each cupcake liner. Use a spoon to make sure it’s spread flat and packed together tightly both on the bottom.

Chocolate Ganache

  • Melt the chocolate chips in the microwave or using a double boiler until smooth.
    If using a microwave, stop to stir the chocolate chips every :15 seconds to prevent them from burning.
  • Cool the melted chocolate slightly, and then stir in the Greek yogurt. It will look chunky at first, but keep stirring until the mixture is uniform and smooth.
