This vegan caramel recipe is seriously magic! It only needs 3 ingredients, and comes together so quick that you’ll wonder why we ever made stovetop caramel to begin with. This no cook vegan caramel recipe has natural ingredients, is gluten-free, refined sugar free, and seriously so delicious!

What are the ingredients for this vegan caramel?
To make this three ingredient vegan caramel you will need:
Cashew Butter
Maple Syrup
Coconut Oil
Note that you can substitute the cashew butter for any nut butter, like almond, but I prefer using cashew butter because it has a more neutral taste. Other nut butters will work for this recipe, but you might taste them a bit.
How do you store this vegan caramel?
This caramel does not need any refrigeration. Store it in an air-tight container on the counter at room temperature, out of direct sunlight, for about a week. If you’d like to keep this caramel for longer, store it in the fridge for up to one month.

INGREDIENTS
1/2 c cashew butter
1/4 c maple syrup
1/4 c coconut oil
DIRECTIONS
Mix all ingredients together in a medium bowl until smooth.
Store caramel in an airtight container at room temp for about one week.
