Vegan Peanut Butter and Jelly Waffle

I have a serious thing for waffles. Seriously. I was gifted a waffle maker two Christmases ago and I keep it right on top of my counter, next to all of the other important appliances that I use on the weekly.

But, ever since I started up my online vegan bakery I haven't been making waffles as often as I would like. This is due in part to how busy I've been with this new venture, and in part to the fact that since I'm making cookies so often I've avoided making other types of dessert, just as to not overdo it. But I was really in the mood for a waffle, so I decided to make it keto-ish too so that I wouldn't feel like I was just diving head-first into a carb/sugar fest that I wasn't prepared for. Enter this vegan keto peanut butter and jelly waffle that is not only approved by me, but by the whole world (small exaggeration here but a girl can dream)!

When trying any waffle recipe (the one I'm sharing below was adapted from Healthy Recipes Blogs) it's important to me that the waffle is two things: crispy and fluffy. These may seem like contradictions, but trust me when I say they're the key components to any good waffle. Crispy on the outside and fluffy on the inside is the way it's supposed to be, and this recipe does just that.

Slather the waffle with a happy spoonful of crunchy peanut butter and no-sugar-added jelly, and we're in serious business. It's like your childhood, but better. I've never been a huge fan of peanut butter and jelly before, but this peanut butter and jelly waffle creation changed the game for me.

I also topped it with some diced strawberries because ~ fruit ~ and cinnamon and syrup for natural sweetness. Hope you love!

Recipe

Ingredients

  • 2 cups almond flour

  • 1 teaspoon baking soda

  • 1/4 teaspoon salt

  • 3 flax eggs

  • 2 tablespoons vanilla extract

  • 2 tablespoons sugar

  • 1/2 cup non-dairy milk

  • 2 tablespoons peanut butter

  • 2 tablespoons jelly

  • Strawberries, honey (syrup if vegan), and cinnamon for topping

Directions

1.Whisk together the almond flour, baking soda, and salt in a medium bowl.

2. Whisk the eggs with the vanilla, stevia, and milk in a separate small bowl.

3. Make a well in the flour mixture, and add in the wet mixture. Mix with a spatula to incorporate, being careful not to overmix.

4. Turn on your waffle maker and spray with non-stick spray. Pour about 1/2 cup of the batter in, spreading to the ends. Cook according to your waffle maker's instructions, until puffy and set.

5. Remove the waffle and let it cool on a rack for a few minutes. Spread with your peanut butter, jelly, and top with strawberries, honey, and cinnamon. Dig in!
