Vegan Black Bean Burritos

This is the best homemade black bean burrito recipe I’ve ever tried, and it also happens to be a completely vegan recipe! This vegan black bean burrito filing is packed with tasty veggies like black beans (obviously), mushrooms, bell peppers, and onion! For flavor, we use taco seasoning to keep things simple and also add in a bit of nutritional yeast for a cheesy twist.
I also LOVE to put some of my vegan queso inside of these burritos. It’s not required, but it will take these vegan black bean burritos to the next level. When you combine the best vegan queso dip with the best black bean burritos, it’s a match made in burrito heaven.
This easy vegetarian black bean burrito recipe comes together in less than an hour. You can also meal prep these burritos, too! Just assemble the burritos, wrap them in wax paper and place them in a large Ziploc bag to freeze.

Black beans (duh)
Mushrooms
Bell peppers

How do you make a vegetarian black bean burrito?
Start out by cooking your chopped veggies in a hot pan for about 5 minutes. Add in the drained, rinsed black beans and cook for a few more minutes. Season, and turn off the heat. Add in the chopped cilantro and nutritional yeast. Squeeze a lime on top and toss it one more time.
Spread the veggies on top of your tortilla, and wrap into a burrito. Heat the finished burrito in a hot pan, seam-side down, for a minute or two so the outside gets nice and crispy. Cut in half and serve with salsa!
Are black bean burritos healthy?
Hmm… I typically don’t like to categorize food as healthy or unhealthy. I think eating a balanced diet is much more important than scrutinizing individual foods or food groups.
These vegan black bean burritos are filled with lots of vegetables like bell peppers, mushroom, and of course black beans, which are always going to be good for you no matter what!
Can you substitute the black beans?
I’m sure you could swap out the black beans for something else! Although I have not tried it for this particular recipe, I imagine many canned beans could work like chickpeas or kidney beans.
Can these burritos be frozen?
Yes, you can easily freeze these easy black bean burritos! Just assemble your burritos and allow them to cool completely. Wrap the individual burritos in wax paper and place them in a large Ziploc bag to freeze.
When it’s burrito time, simply unwrap each burrito and microwave for 2-3 minutes, flipping as needed so it reheats evenly. Place the burrito in a hot pan so it can get crispy up on the outside–that’s the key to an extra tasty homemade burrito!
Vegan Black Bean Burritos
Ingredients
- 2 tbsp olive oil
- 4 oz mushrooms, chopped
- 1 bell pepper, chopped
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp taco seasoning
- 1/4 c nutritional yeast
- salt, to taste
- 1 can black beans, drained and rinsed
- 1/2 bunch cilantro, chopped (optional)
- 1 lime
- 4-6 tortillas
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add in the mushrooms, bell pepper, onion, and garlic. Cook for 5 minutes, stirring occasionally.
- Season the veggies with the taco seasoning, nutritional yeast, and additional salt (to taste).
- Add in the black beans and cook for another 2-3 minutes, just until heated through. Remove from heat.
- Stir in the chopped cilantro and lime juice.
- Distribute the black bean burrito filling on the tortillas, and wrap them up to form a burrito.
- When ready to serve, place the burritos in a hot pan, seam-side down, and heat until the outside gets crispy, about 1-2 minutes. Flip and repeat.
- Serve with avocado, salsa, or my vegan queso dip!
