Vegan Banana Pudding
Banana pudding is one of my favorite classic desserts. This perfect vegan banana pudding recipe is made with simple ingredients that you’ll layer into parfaits!
What are the ingredients for this banana pudding?
The three main components for this vegan banana pudding recipe are:
Pudding, made with fresh bananas, non-dairy milk, maple syrup, and cornstarch.
Graham crackers, check to make sure your graham crackers are honey-free if you follow a vegan diet.
Whipped topping, such as coconut whipped topping, if you follow a vegan diet.
Want to make banana pudding with real bananas?
Of course you do! To make this vegan banana pudding recipe, start out by mashing a couple of ripe bananas. Simmer them in a small pan with some non-dairy milk, butter, a splash of vanilla, maple syrup, and cornstarch. Once the mixture thickens, remove it from heat and allow it to cool completely in the fridge.
Fold some non-dairy whipped topping (I like coconut whipped topping) into the pudding until it’s pudding perfectly fluffy. This pudding will be the base for our vegan banana pudding parfaits! Of course, we’ll finish it off by layering it in with some crushed graham crackers and fresh sliced bananas.
The full recipe on how to do this is below.
Can you make banana pudding the night before?
Yup! You can certainly make this vegan banana pudding the night before. This banana pudding tastes great the next day. It also tastes amazing right when you finish making it, so you can enjoy this banana pudding at room temperature or cold.
Can you make banana pudding with almond milk?
Yes! The main ingredients for this vegan banana pudding recipe are:
Bananas
Non-dairy milk (almond milk, soy milk, oat milk… use what you like)!
Vanilla
Maple syrup
Whipped topping
So, you can use almond milk for this vegan banana pudding recipe, or any type of non-dairy milk that you prefer.
Is banana pudding healthy?
I generally don’t like to categorize individual foods as healthy or unhealthy. Instead, I believe eating a balanced diet that mainly consists of whole, natural foods is more important than scrutinizing individual meals and ingredients.
As with any treat, vegan banana pudding shouldn’t be the main part of your diet. Don’t forget to eat your veggies, too!
Is banana pudding baked?
Nope! This vegan banana pudding recipe is completely no bake.
While you do cook the pudding first on the stovetop, all of the magic comes together once you assemble the banana pudding ingredients in parfait glasses. You can either eat these banana pudding parfaits immediately (that’s what I did!), or you can allow them to sit in the fridge overnight to enjoy the next day.
Vegan Banana Pudding
Ingredients
- 2 ripe bananas, mashed
- 1 1/2 c non-dairy milk
- 1 tbsp vegan butter
- 1 tbsp maple syrup
- 1 tbsp cornstarch
- up to 1/4 tsp turmeric, for color
- 1/2 tsp vanilla
- 1/2 c whipped topping, non-dairy
- 1 sleeve of graham crackers, lightly crushed
- 2 bananas, sliced
- Extra whipped topping
Instructions
- In a small bowl, mix 1/4 c of the non-dairy milk with the cornstarch until it forms a slurry. Set aside.
- Place the mashed bananas, non-dairy milk, vegan butter, maple syrup, and turmeric in a small saucepan over medium heat, and bring to a simmer. Add in the cornstarch slurry, and whisk until smooth. Cook until the mixture is simmering and thickened, about 2-3 minutes.
- Remove pan from heat and mix in the vanilla.
- Transfer the pudding to a heat-proof container and refrigerate for a few hours, until completely cool (I cooled mine overnight).
- Once cooled, fold in the whipped topping until the pudding is light and fluffy.
- To build your banana pudding parfaits, layer the crushed graham crackers, banana, pudding, and whipped topping in small cups or ramekins, repeating until all ingredients are used.
- Enjoy immediately, or cover with plastic wrap and refrigerate to enjoy the next day.
