Baked Oatmeal Cups

Oatmeal is one of my favorite breakfast foods. When I was a kid, we ate oatmeal for breakfast more often than not, and now that baked oatmeal is trending it seemed like a good time to re-explore one of my favorite childhood foods. This baked oatmeal recipe is delish because it creates tender little oatmeal cups that you can enjoy individually. Not to mention, each cup is stuffed with strawberry jam, which makes them even more fun to eat!

Is this recipe vegan and gluten-free?
Yup! This strawberry baked oatmeal recipe is completely vegan.
You can easily make this recipe gluten-free by using gluten-free oats. While oats are naturally gluten-free, they are exposed to cross-contamination during processing so it’s best to be safe and use oats that are specifically marked as gluten-free.
Is this recipe refined sugar free?
Yes, it is! One of my favorite things about this recipe is that it is refined sugar free. You can use honey or maple syrup to sweeten this recipe, which I prefer over granulated sugar.
I also used sugar-free strawberry preserves for these baked oatmeal cups, and sugar-free applesauce. Most store bought jams and applesauces have a ton of added sugar, so I went the sugar-free route, but you can use whatever you prefer!

Non-dairy milk: to soften the oats as they bake.
Applesauce: ensures the baked oats stay moist.
Flax egg: to add moisture and hold the oats together.
Maple syrup, or honey: for natural sweetness.

Strawberry jam: is added to the center of each baked oatmeal cup. Yum!
How do you make baked oatmeal cups?
This recipe is super easy! The full instructions are below, but here the gist of it:
Mix together the non-dairy milk, honey (or maple syrup), applesauce, flax egg, and vanilla.
Add in the oats, baking powder, cinnamon, and salt. Mix until just combined. It may still be a little liquidy, and that's ok.
Spoon half of the oats mixture into six of the muffin cups.
Add about 1 tbsp of strawberry jam on top of each muffin cup, spreading it into an even layer.
Spoon the remaining half of the oats mixture on top of the jam.
Sprinkle with coconut sugar, if using.
Bake the oatmeal cups for about 25-30 minutes, until the oatmeal looks golden brown and set. Allow to cool before serving.
How do you store this baked oatmeal?
Allow the baked oatmeal cups to cool completely, and then store them in an airtight container in the fridge. They will remain fresh for about 3 days. They taste best slightly warm, so be sure to reheat them in the microwave before enjoying!

Ingredients
- 3/4 c non-dairy milk
- 1/4 c honey or maple syrup
- 1/4 c sugar-free applesauce
- 1 flax egg (1 tbsp flax meal + 3 tbsp water)
- 1/2 tsp vanilla extract
- 1 1/2 c oats
- 1/2 tsp baking powder
- 1 tsp cinnamon
- pinch of salt
- 1/2 c sugar-free strawberry jam, or preserves
- 1/4 c coconut sugar (optional)
Instructions
- Preheat oven to 350 F degrees. Grease a muffin pan with non-stick spray and set aside.
- In a medium bowl, mix together the non-dairy milk, honey (or maple syrup), applesauce, flax egg, and vanilla.
- Add in the oats, baking powder, cinnamon, and salt. Mix until just combined. It may still be a little liquidy, and that's ok.
