I have a confession to make: I’m not a huge cereal person. Sure, I used to love cereal as much as the next kid (hellooo, Cinnamon Toast Crunch), but I eat it less and less these days. I’ll buy a box of cereal maybe once a year. But while I don’t miss eating cereal for breakfast every day, one thing I do miss are cereal bars.

There’s something about the crunchy, soft texture of a cereal bar that I really, really like. And these healthy homemade cereal bars strike the perfect balance between sweet, salty, soft, and crunchy. It’s pretty much the most perfect breakfast or snack ever made!

Ingredients for healthy homemade cereal bars

These no bake cereal bars need only a few ingredients. Everything listed here is all-natural, wholesome, and refined sugar free! To make these homemade cereal bars, you’ll need:

And, of course, you need cereal! I used Three Wishes cereal for this recipe, because it’s what I had on hand. Use whatever cereal you like!

How do you make cereal bars at home?

These healthy cereal bars don’t need to be baked! So this recipe is super easy. The full instructions are below, but here is the gist of it:

  1. Line an 8”x8” cake pan with wax paper or parchment paper. Set aside.

  2. Pour your cereal into a large bowl. I like to lightly crush up some pieces, but you can leave them whole.

  3. Add the remaining ingredients–except the chocolate–to a saucepan on medium heat. Lightly mash everything together as you stir it so that a smooth syrup forms. The syrup will thicken as it cooks, so add a splash more non-dairy milk if needed to keep it smooth.

  4. Pour the syrup into the bowl of cereal. Mix together until the cereal pieces are coated in the syrup.

  5. Transfer the cereal to the cake pan and press it into a single layer that covers the pan. Set aside.

  6. Melt the chocolate in the microwave by heating it up at 15-20 second intervals, stopping to stir each time.

  7. Once the chocolate is melted, pour it over the cereal and smooth it into a thin layer.

  8. Freeze the cereal for at least 1 hour, until set.

  9. Slice and serve your cereal bars!

What cereal can I use for these cereal bars?

I used Three Wishes cereal for my cereal bar recipe. I like it because it’s low in sugar while being high in protein and fiber! You can use any type of cereal you like. Cheerios, Cinnamon Toast Crunch, even Cornflakes would be great for this recipe… but I’ll leave it up to you :)

How do you store these homemade cereal bars?

After slicing, keep these cereal bars in an airtight container and store in the fridge for up to one week.

Notes

*To soften your dates, simply place them in a bowl and pour boiling water over them. Allow dates to sit for 15 minutes, until soft.
