Oatmeal Chocolate Chip Collagen Cookie Bars

These Oatmeal Chocolate Chip Cookie Bars have a hidden secret: they’re healthy and really good for you! We add collagen peptides powder to these tasty cookie bars to sneak in a little beauty boost in every bite. The collagen is optional, but recommended! Either way, these cookie bars are a great little treat to meal prep at the start of the week.

WHY I MADE THESE CHOCOLATE CHIP COLLAGEN BARS

I know I’m not the only one who’s on a collagen kick right now. I started adding collagen powder to my morning matcha latte about a month ago and I was pretty shocked that the collagen powder didn’t change the taste or the texture of my matcha latte at all! I’m all about these little tricks that make my days more healthful and plentiful, with little effort.

So then I started thinking… what else can I add collagen powder to? Baked goods instantly came to mind (no surprise there). And because the benefits of collagen powder are potentially plentiful (you can read more about it in Harvard Health), I thought adding collagen powder to chocolate chip cookies seemed like the next natural step in my collagen powder journey.

But then, knowing me, I had to take it a step further. I started developing this recipe around the same time I was filming my Copycat Philadelphia Cheesecake Bars recipe, and it got me to think about other delicious treats from my childhood. Kudos Bars came to mind (remember those? I have the recipe for them here), and also Quaker Oat’s Chewy Dipps granola bars.

And I couldn’t stop thinking about them. And that’s how I came up with these Oatmeal Chocolate Chip Collagen Cookie Bars. I mean, yum. Every word in that sentence sounds perfect, right? Because these are inspired by the Chewy Dipps bars, I 100% intended on coating these finished bars with melted chocolate, but to be honest I thought they tasted perfect right on their own. And I bet you’ll agree with me, too!

MY OATMEAL CHOCOLATE CHIP COLLAGEN BARS RECIPE

The full recipe for these tasty collagen cookie bars is below, but here’s a quick summary of how they’re made:

  • In a large bowl, combine the maple syrup, coconut oil, almond butter, and vanilla until smooth and incorporated.
  • Add in the oats, almond flour, collagen peptides powder, coconut flour, coconut sugar, and ground flax meal (if using).
  • Gently stir in the chocolate chips.
  • Scoop the batter into the prepared loaf pan, and pat it down into a single layer that reaches all sides of the pan.
  • Bake until the corners of the bars are lightly golden brown.
  • Allow to cool to room temperature.

HOW TO STORE THESE CHOCOLATE CHIP COLLAGEN BARS

You can store this bars, covered, at room temperature for about 2 days. Keep them in the fridge for even longer storage. Just make sure the container is airtight, and they should last for about a week in the fridge, which makes them a perfect little treat to enjoy throughout the week!.

CHOCOLATE CHIP OATMEAL BARS FAQ

1. Do I have to add collagen to this recipe?

Nope! You can totally leave the collagen peptides out if you don’t have them, or don’t want to use them. The magical thing about collagen peptide powder is that you don’t taste it in the finished product at all. It dissolved pretty perfectly. It also didn’t affect the texture of this recipe, either, so if you leave it out you don’t have to adjust the measurements on the rest of the ingredients.

2. Which brand of collagen powder do you use?

There are many collagen powders on the market, and I used the unflavored one by Vital Proteins. They also have a chocolate collagen powder which may be interesting to experiment with, if you’re up for it…

Ingredients

  • 1/3 c maple syrup
  • 1/4 c coconut oil*
  • 1 tbsp almond butter
  • 1 tsp vanilla
  • 3/4 c gluten free oats
  • 1/2 c almond flour
  • 2 tbsp collagen peptides powder** optional
  • 2 tbsp coconut flour or, almond flour
  • 1 tbsp coconut sugar*** optional
  • 1 tbsp ground flax meal optional
  • 1/2 c dark chocolate chips

Instructions

  • Preheat oven to 350 F. Line a loaf pan with parchment paper, and set aside.
  • In a large bowl, combine the maple syrup, coconut oil, almond butter, and vanilla until smooth and incorporated.
  • Add in the oats, almond flour, collagen peptides powder, coconut flour, coconut sugar, and ground flax meal (if using). Stir the wet and dry ingredients together until the mixture resembles cookie dough.
  • Gently stir in the chocolate chips.
  • Scoop the batter into the prepared loaf pan, and pat it down into a single layer that reaches all sides of the pan.
  • Bake for about 20-25 minutes, or until the corners of the bars are lightly golden brown.
  • Allow to cool to room temperature, and then place in the fridge for 30 minutes to set.
  • Cut bars into squares. See the blog post above for storage tips.

Notes

*Use refined coconut oil if you don’t want any “coconuty” taste. Go with unrefined if you don’t mind a little hint of coconut!
**Optional, leave this out if you don’t have it. The recipe will still turn out great!
***Optional, but makes these bars a little sweeter and gives them more of a “cookie” taste.
