Green Tea Kit Kat Bars

Green Tea Kit Kat Bars are even better when they’re made from scratch! My homemade Kit Kat bar recipe features crispy wafer cookies and a sweet matcha filling. Follow this DIY Kit Kat Bar recipe to learn how to make this classic candy bar easily at home.

WHY I MADE THESE GREEN TEA KIT KAT BARS AT HOME

My husband and I are celebrating our one year anniversary this month, and to this day we still talk about how much fun we had on our honeymoon in Japan. When we were in Japan, we bought quite a few bags of the green tea Kit Kat bars during our trip and ate wayyy too many of them in our hotel room at night. That’s still the best vacation I’ve ever been on hands down, and Japan may be my new favorite country to visit!

I’ve loved matcha Kit Kat bars ever since I was a kid, back when you had to order the matcha flavor online because they were super hard to find the U.S.

As an adult, I still believe the green tea Kit Kats are the best Kit Kats, and even though I don’t really eat Kit Kat bars anymore the green tea Kit Kats will always be a source of nostalgia for me. And of course, because I love them so much I just knew that I had to try making them. Such a sweet way to celebrate our anniversary, right?

My homemade green tea Kit Kat bar recipe has all of the great flavors and snappy, crunchy texture of a traditional Kit Kat bar, with the added benefit of being gluten free. My Kit Kat bars are made with almond flour, maple syrup, and coconut oil to make this treat a bit more wholesome than the one you buy in stores.

Each crunchy cookie bar is dipped in a matcha-vanilla coating, which is simply vanilla melting wafer mixed with matcha. I originally tested this recipe using white chocolate, and the result was a disaster. White chocolate can be difficult to melt, but Vanilla Melting Wafers are just so much easier. You’ll thank me for this tip!

MY HEALTHIER GREEN TEA KIT KAT RECIPE

The full recipe for my green tea Kit Kat bars is in the recipe card at the bottom of this blog post, but here’s a quick overview of how to make it.

Wafer Cookies

  • In a medium bowl, mix together almond flour, maple syrup, and coconut oil until a dough forms.
  • Using a rolling pin, roll the dough into a thin rectangle. The dough should be thin, but not so thin that it breaks.
  • Cut the dough into rectangles. Bake for about 10 minutes, until the top is firm and the edges are lightly golden.
  • Cool the cookies completely on the baking sheet.
  • Divide the cookies into groups of four.

Matcha Filling

  • Melt the vanilla melting wafers according to the package instructions.
  • Add the matcha, and mix together until the matcha is fully incorporated and smooth.
  • Spread the matcha filling on top of 3 of the 4 cookies in each group. Stack the cookies so that the the 4th cookie is the one with no filling on top.
  • Repeat with the remaining groups of cookies.

Matcha Coating

  • Melt the vanilla melting wafers according to the package instructions.
  • Add the matcha, and mix together until the matcha is fully incorporated and smooth.
  • Dip each bar into the matcha coating, using a fork to turn it so that it’s coated on all sides.
  • Place the Kit Kat bars in the fridge for about 15 minutes, or until the coating has set.

Wafer Cookies

  • Almond flour: The base of our crunchy, gluten free Kit Kat wafer cookies. Almond flour is so versatile and great for gluten free baking. I haven’t tested this recipe using traditional flour or gluten free flour, but if you give that a try let me know how it turns out!
  • Maple syrup: Adds just a touch of sweetness, and more importantly moisture, to our cookie dough.
  • Coconut oil: Gives our cookies the same crunch and snap that makes traditional Kit Kat bars so good!
  • Vanilla: Flavor! Flavor! Flavor!

Matcha Filling & Matcha Coating

  • Vanilla Melting Wafers: Ok…you not have heard of Vanilla Melting Wafers or know what they are. They are the magic ingredient that gives us a silky smooth, easy to work with frosting and coating that makes our matcha Kit Kat bars so delicious! I originally tested this recipe using white chocolate, and the result was a disaster. White chocolate can be difficult to melt, but Melting Wafers are just so much easier. You’ll thank me for this tip!
  • Matcha: Use a high quality, culinary grade matcha, if you can find it. We want our matcha Kit Kats to be bright green, fresh, and pretty!

HOW LONG DO THESE KIT KATS TAKE TO MAKE?

You’re just a few easy steps away from making these simple gluten free Kit Kat bars at home:

  • Making the Kit Kat Bar cookies: 15 minutes
  • Baking the cookies: 10 minutes
  • Preparing the matcha coating: 10 minutes
  • Piping and dipping the cookies: 20 minutes

In total, this homemade green tea Kit Kat bar recipe will only take about an hour to make, not including rest time.

HOW TO STORE THESE HOMEMADE KIT KAT BARS?

Store leftovers in an airtight container for up to a week.

GREEN TEA KIT KATS FAQ

1. Where can I find matcha powder? What type of matcha should I use?
Matcha powder is available at most Asian grocery stores, health food stores, or online. Be sure to use culinary grade matcha—it’s more affordable than ceremonial grade and perfect for baking.

2. What brand of vanilla melting wafers do you recommend?
I really like the vanilla melting wafers from Ghirardelli. Avoid white chocolate chips unless they’re designed for melting—traditional white chocolate doesn’t always melt well.

3. Do I need to temper the chocolate?
Nope! Since you’re using vanilla melting wafers (which are made for easy melting and coating), tempering is not necessary. Just follow the package instructions for best results.

4. How do I get a smooth coating on the bars?
Make sure the melting wafers are fully smooth before dipping. Use a fork to dip and tap off any excess coating. If it starts to thicken, gently rewarm it in the microwave or over a double boiler.

5. Why did my wafer cookies crack or crumble?
That can happen if the dough is too dry or rolled too thin. Make sure the dough holds together when pressed and don’t roll it thinner than 1/8″. Also, be gentle when cutting and transferring them to the baking sheet.

Ingredients

Wafer Cookies

  • 1 1/4 c almond flour
  • 2 tbsp maple syrup
  • 3 tbsp coconut oil melted
  • 1 tsp vanilla
  • 1/4 tsp baking soda
  • Pinch of salt

Matcha Filling

  • 5 oz vanilla melting wafers
  • 1/4 tsp matcha powder

Matcha Coating

  • 10 oz vanilla melting wafter
  • 1/2 tsp matcha powder

Instructions

Wafer Cookies

  • Preheat oven to 350 F.
  • In a medium bowl, mix together all of the Wafer Cookie ingredients until a dough forms. The dough will be a bit sticky, but it should hold together when pressed between your fingers.
  • Lay a sheet of parchment paper on top of the counter, and place the dough ball on top. Place another sheet of parchment paper on top of the dough so that it’s sandwiched between two sheets of paper.
  • Using a rolling pin, roll the dough out into a rectangle until it is about 1/8″ thick. The dough should be thin, but not so thin that it breaks.
  • Peel off the top sheet of parchment paper.
  • Use a sharp knife or pizza cutter to cut the dough into rectangles about 4″ x 1/2″. Check out the video to get an idea of sizing. I ended up with 32 cookies.
  • Keeping the dough on the parchment paper, transfer it to the baking sheet and bake for about 10 minutes, until the top is firm and the edges are lightly golden.
  • While the cookies are still warm, use the knife or pizza cutter to carefully recut the cookies and separate them on the baking sheet. Cool the cookies completely on the baking sheet.
  • Divide the cookies into groups of four.

Matcha Filling

  • Melt the vanilla melting wafers according to the package instructions–this may mean melting them in the microwave or using a double boiler.
  • Add the matcha powder, and mix together until the mixture is fully incorporated and smooth.
  • Transfer the matcha filling to a piping bag fitted with a flat tip, or use a spoon to spread the matcha filling on top of 3 of the 4 cookies in each group. Stack the cookies so that the the 4th cookie is the one with no filling on top. Check out the video for visual instruction.
  • Repeat with the remaining groups of cookies.

Matcha Coating

  • Melt the vanilla melting wafers according to the package instructions–this may mean melting them in the microwave or using a double boiler.
  • Add the matcha powder, and mix together until it is fully incorporated and smooth.
  • Dip each bar into the matcha coating, using a fork to turn it so that it's coated on all sides. Return the Kit Kat bar to the parchment paper. Repeat with the remaining bars.
  • Place the Kit Kat bars in the fridge for about 15 minutes, or until the coating has set.
  • Store leftovers in an airtight container for up to a week.
