Vegan Banana Bread Donuts

If you’re looking for a way to use ripe or overripe bananas, banana bread is always the first treat that comes to mind. Banana bread recipes blew up over the pandemic–it seemed that everyone was busy making banana bread! Believe it or not, I haven’t made banana bread in a few years, but I did have some overripe bananas on hand recently and I was trying to think of a creative way to use them.

Banana bread? No. Banana bread donuts? Yes!

The inspiration for this vegan donut recipe also comes from the fact that I recently bought a donut pan (this one, to be exact) and had yet to use it. And then, it all came together.

These vegan banana bread donuts are deliciously moist and very easy to make! All you need is a donut pan. And because these homemade donuts are baked and not fried, they are a little healthier than your traditional homemade donut recipe.

This recipe also uses coconut sugar in place of brown sugar, and the result is a deliciously moist baked donut that’s the perfect way to use up ripening bananas!

This vegan banana bread donuts recipe is a great way to use ripe bananas!

Ingredients

DONUTS
  • 1 ripe banana, mashed
  • 1 flax egg (1 tbsp flax meal + 3 tbsp water)
  • 1 tsp vanilla
  • 1 1/2 tbsp vegan butter, melted
  • 1/4 c coconut sugar
  • 1/2 c all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • pinch of salt
ICING
  • 2 tbsp vegan butter, melted
  • 1/2 c powdered sugar
  • 1/2 tsp vanilla extract
  • pinch of salt
  • splash of non-dairy milk

Instructions

DONUTS
  1. Preheat oven to 350 degrees. Spray a donut pan with non-stick spray and set aside.
  2. Mix the banana, flax egg, vanilla, melted butter, and coconut sugar together in a medium bowl.
  3. Add the dry ingredients and mix until just combined.
  4. Spoon the batter into the donut pan, filling to the top.
  5. Bake the donuts for about 17-20 minutes. You’ll know they’re done when you gently press the tops and they feel springy.
  6. Remove donuts from the oven and allow them to cool in the donut pan for about 10 minutes before flipping onto a wire rack. Cool completely before icing.
ICING
  1. Mix the butter, powdered sugar, vanilla extract, and salt together in a small bowl. Add a splash of non-dairy milk and mix until the icing is not too thick.
  2. Dip the cooled donuts in the icing.
