Oh look, another s'mores recipe.

Yes, it's the season of making s'mores and we're just going to have to love the fact that I'm sharing a new s'mores recipe every day now. Ok? Ok. Let's do it.

I originally found this recipe for s'mores bars way back in the day when I first started my Pinterest account back in 2013. Back before pins had to be "pretty", or aspirational, or anything beyond what you would literally cut and paste into your janky middle school scrapbook. Pinterest has grown up a lot since then (for the better of course) but I still like to look back at the first recipes I pinned back then. This s'mores bars recipe popped up during one of my more recent trips down memory lane, and it immediately took me down the road to nostalgia.

This s'mores bar recipe was just the kind of thing I was into in 2013. It's a simple but extravagant chocolate-loaded calorie bomb. So it's pretty much perfect. This is the only s'mores bar recipe you need during hot girl/guy summer 🔥

Like I said, this s'mores bar recipe is easy peasy. All you need to do is make a simple graham cracker dough, top it off with bars of milk chocolate, and slather the whole thing with marshmallow fluff before covering it again with a layer of graham cracker dough. I mean, what sounds better than that? Can someone say Helloooo Summer.

One of these days I'll have to test out and master a vegan marshmallow recipe. Until then, this recipe is not vegan friendly (for all of my vegan readers out there), but a vegan version will come in the future. Promise!

Recipe

Ingredients

  • 1/2 cup butter, room temp

  • 1/4 cup brown sugar

  • 1/2 cup sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 1/3 cups all purpose flour

  • 3/4 cup graham cracker crumbs

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 2 king-sized milk chocolate bars (e.g. Hershey’s)

  • 1 1/2 cups marshmallow fluff

Directions

Preheat oven to 350°F. Grease an 8-inch square baking pan with butter.

In a large bowl, cream together butter and sugars until light. Beat in egg and vanilla. In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add to butter mixture and mix at a low speed until combined.

Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan.

Place chocolate bars over dough. Spread chocolate with marshmallow creme. Place remaining dough in a single layer on top of the fluff (most easily achieved by flattening the dough into small circles and laying them together).

Bake for 30 to 35 minutes, until lightly browned. Cool completely before cutting into bars.
