Pumpkin Chocolate Chip Skillet Cookie
Thanksgiving is the best holiday of the year for one reason: the food. Having all your friends and family around you is great too BUT we all know Thanksgiving is a huge foodie holiday. It’s the one day of the year that we all eat 7000 calories over the course of an hour and we high-five each other as we do it. At least, that’s how my Thanksgivings go…
I have spent every Thanksgiving in L.A. ever since I moved here five years ago. I spend a week home in Atlanta every Christmas, so flying home twice over the course of four weeks just never made sense logistically or financially. So I’ve spent every Thanksgiving with friends in the area. All us orphans gather together in someone’s apartment and spend the day lounging around preparing food, watching tv and stretching out our sweat pants. Friendsgiving is the BEST. It’s so lowkey and calm, and gives you and your friends the opportunity to make some really fun and delicious food together.
This year, my contribution to Friendsgiving will be this pumpkin-y, chocolate-y dessert that always pleases a crowd everywhere I bring it: a Pumpkin Chocolate Chip Skillet Cookie. Skillet cookies are the perfect dessert for a group of friends because you can all just grab a spoon and dig in directly into the cookie as you watch The Princess Bride for the thirtieth time. Or you can slice it like a pizza and put individual pieces on a plate if you were raised by humans and not wolves, I guess.
I love this recipe because seriously nothing pleases a crowd like a big ol’ cookie. Skillet cookies are genius in that way because they take a great dessert and quadruple it so it can feed a group. This pumpkin chocolate chip skillet cookie is so good because it has lots of melty dark chocolate chip pieces melted into an awesome pumpkin cookie dough. Top this with some whipped cream (I used a coconut whipped cream that I found at Trader Joe’s) or non-dairy ice cream. You’ve got options here and I’m really excited for you.
For added fun, I added a scoop of Silver Fern’s vanilla protein powder to this recipe for that extra nutrition. Your friends will thank you later, I promise. I’ve talked about this protein powder a bit in my Homemade Protein Hot Chocolate post, but basically this plant-based protein powder is awesome because it’s vegan and packed with probiotics. Your gut will thank you, too!
If you don’t use Silver Fern’s vanilla protein powder for this recipe (but you should) then add 1/4 a tsp of vanilla extract instead. Either way, you and all your friends are going to love this Friendsgiving dessert. Dig in!
Ingredients
3 tbsp vegan butter, melted
4 tbsp white sugar
3 tbsp brown sugar
1 flax egg
2 tbsp Silver Fern vanilla protein powder (sub: 1/4 tsp vanilla extract)
6 tbsp canned pumpkin puree
3/4 cup plus 1 tablespoon all purpose flour
1/4 tsp baking soda
1/8 tsp salt
1/4 tsp cinnamon
2/3 cup non-dairy chocolate chips (I use Trader Joe’s)
Directions
Preheat oven to 350 F.
In a large bowl, stir together the melted butter, sugars, flax egg, and protein powder.
Add in the flour, baking soda, salt and cinnamon and stir until combined.
Stir in chocolate chips.
Spread the dough into a cast iron skillet. Bake for 16-18 minutes, just until edges are done.
Serve with whipped cream, ice cream, and fudge sauce!
