Banana Blueberry Breakfast Cookies

These healthy banana oat cookies are soft, chewy, and naturally sweetened with maple syrup. Made with wholesome ingredients like rolled oats, blueberries, and almond butter, these refined sugar-free cookies are perfect for breakfast!

WHY I MADE THESE CARAMELIZED BANANA BREAKFAST COOKIES

Ever since I shared my Healthy Breakfast Cookies recipe last fall, I’ve had a few ideas for even better, more delicious breakfast cookie combinations. Of course, a banana and oat breakfast cookie seemed like a no-brainer, since they naturally go so well together. Add in a few blueberries, and now you have a breakfast cookie recipe that that tastes like a hearty bowl of oatmeal, in cookie form!

But you all know that I can’t just stop at the very first idea I have. I have to take it one step further, and after a bit of brainstorming that’s where the idea for these Caramelized Banana Breakfast Cookies came to play. I like bananas, but I love caramelized bananas because the heat just enhances all of those natural great flavors while adding a sugary caramelized note to it all.

It’s just perfect if you ask me.

And so are these healthy banana and oat breakfast cookies, made with wholesome ingredients like rolled oats, maple syrup, almond butter, blueberries, and banana, so you can feel good about starting your day with these, too. MY BANANA AND BLUEBERRY COOKIE RECIPE

  • Caramelize the Banana: Melt the coconut oil in a skillet. Add the sliced banana in an even layer, and allow them to cook until the bottom is lightly browned. Flip and cook the second side. Transfer the caramelized banana to a mixing bowl.
  • Continue the Batter: Add the rest of the cookie ingredients, stirring everything together until incorporated.
  • Bake the Cookies: Scoop the batter onto the baking sheet. Bake for about 15 minutes, until the cookies are lightly golden on top.

  • Banana: The foundation of this recipe! When sliced and cooked in a tiny bit of coconut oil, the banana caramelizes slightly, enhancing its sweetness and flavor. Once mashed, it acts as a natural binder (replacing eggs) while adding moisture and softness. Be sure to use a banana that is perfectly ripe with a solid yellow skin.
  • Almond Butter: Adds creaminess, healthy fats, and also helps to hold the cookies together. Almond butter also gives these cookies a soft, chewy texture.
  • Maple Syrup: Adds gentle sweetness and helps keep the cookies moist.
  • Coconut Flakes: For chewiness, and I love the combination of banana + coconut in this recipe. If you’re a fan of tropical flavors, then this recipe is definitely for you. Be sure to use unsweetened coconut flakes to reduce the overall sugar content in this recipe.
  • Blueberries: For juicy sweetness, and blueberries are also a great source of fiber and antioxidants.
  • Rolled Oats and Oat Flour: Oats form the bulk of the cookie. They absorb moisture from the banana and almond butter, creating structure without any added flour, and they add fiber!

HOW LONG DO THESE CARAMELIZED COOKIES TAKE TO MAKE?

This healthy caramelized banana breakfast cookie recipe has a few different components to it, but they all come together quickly and easily.

HOW TO STORE THESE HEALTHY BREAKFAST COOKIES?

If you have leftovers, store them in an airtight container either on the counter, in the fridge, or even in the freezer! Here’s how long they’ll last:

  • On the counter, at room temperature: up to 2 days
  • In the refrigerator: up to 5 days
  • In the freezer: up to 2 months

BANANA BREAKFAST COOKIES FAQ

1. Are these banana breakfast cookies actually healthy?
In my opinion, yes! These cookies are made with whole food ingredients like banana, rolled oats, almond butter, blueberries, and unsweetened coconut. They’re naturally sweetened with maple syrup and contain no refined flour or sugars. These cookies have fiber, healthy fats, and antioxidants, too!

2. Can I use frozen blueberries?
I haven’t tried it, but if you want to use frozen blueberries instead, make sure they’re straight from the freezer instead of thawed. Gently fold them in to prevent too much liquid seeping into the batter.

3. Can I substitute the almond butter?
Yep! You can swap almond butter for peanut butter, cashew butter, or even sunflower seed butter if you need a nut-free option.

4. Do I need to cook the banana first?
It’s not necessary, but these are caramelized banana breakfast cookies, after all 🙂 Lightly cooking the banana in coconut oil caramelizes its natural sugars and enhances sweetness and flavor. It also makes the banana easier to mash and gives the cookies a richer taste. I really recommend it!

5. Is this recipe vegan and gluten-free?
Yes, these cookies are naturally gluten free and vegan! Just make sure that the rolled oats you use are certified gluten-free. The recipe contains no eggs or dairy, so it’s already vegan friendly, too.

6. How should I store these cookies?
If you have leftovers, store them in an airtight container either on the counter, in the fridge, or even in the freezer! These cookies keep great at room temperature for up to 2 days, in the refrigerator for up to 5 days, or in the freezer for up to 2 months!

7. What else can I mix in besides blueberries?
You have so many options! Try some chopped nuts (like almonds), pumpkin seeds, chia seeds or flaxseeds, dark chocolate chips, or hemp seeds!

8. Why do I need to flatten the cookies before baking?
These cookies don’t spread much because they don’t contain flour or eggs. Flattening the tops before baking helps them cook evenly and achieve the right chewy texture.

Caramelized Banana and Blueberry Breakfast Cookies

Ingredients

  • 1 ripe banana sliced in half*
  • 1 tbsp coconut oil for cooking
  • 2 tbsp almond butter
  • 1/4 c maple syrup or honey
  • 1 tsp vanilla extract
  • 1 c old fashioned oats
  • 1/4 c oat flour
  • 1/4 c coconut flakes unsweetened
  • 1/2 tsp cinnamon
  • 1/4 tsp baking soda
  • 1/3 c fresh blueberries

Instructions

  • Preheat oven to 350 F. Line a baking sheet with parchment paper, and set aside.

Caramelize the Banana

  • Melt the coconut oil in a skillet over medium heat.
  • Add the sliced banana in an even layer, laying them cut-side down. Without moving the bananas, allow them to cook for 2-3 minutes, until the bottom is lightly browned. Flip and cook the second side for about 2 minutes more.
  • Transfer the caramelized banana to a medium mixing bowl. Mash with a fork, and allow to cool for a few minutes.

Continue the Batter

  • Add the almond butter, maple syrup, and vanilla extract, and mix until combined.
  • Next, add the oats, oat flour, coconut flakes, cinnamon, baking soda, and fresh blueberries. Stir everything together until incorporated.

Bake the Cookies

  • Scoop the batter onto the baking sheet (about 2 tbsp of batter per cookie), spacing the cookies out as the edges will spread a tiny bit.
  • Flatten the tops of the cookies.
  • Bake in the oven for about 15 minutes, until the cookies are lightly golden on top.
  • Transfer the baking sheet to a cooling rack, and cool completely.

Notes

* I recommend using a firm, ripe banana that is not overripe. Choose a banana with solid yellow skin, if possible, for the best texture.
