In my opinion, November is still officially Fall, so I’m cramming in a few of my favorite Fall snack recipes before the holiday season starts. These pumpkin granola bars make a great breakfast or snack, and they are so easy to make! My favorite thing about these easy chewy pumpkin granola bars is obviously the wonderfully cinnamon-y taste that you get in every bite, and of course the chocolate dip.

You can enjoy these chewy pumpkin granola bars with or without the chocolate dip, but I find the chocolate coating makes them even more fun. You can use either white chocolate or traditional chocolate chips. Either way, you’re gonna love them!

Are these granola bars gluten free?

Whether or not this granola is gluten free depends on the types of oats that you use. Oats are by themselves gluten free, HOWEVER due to the manufacturing process oats are frequently exposed to wheat. So, unless the oats you are using explicitly state they are gluten free, assume that they are not gluten free.

I used Rice Krispies for this recipe, and Rice Krispies are NOT gluten-free. They are made with barley and malt, which may contain gluten. If you follow a gluten free diet and want to use a gluten free puffed rice cereal, try this one from Nature’s Path.

Is this granola vegan?

I used Rice Krispies for this recipe, and Rice Krispies are NOT vegan. If you follow a vegan diet, you can simply omit the Rice Krispies and use an equal amount of oats instead.

Are granola bars healthy?

I generally don’t like to categorize individual foods as healthy or unhealthy. Instead, I believe eating a balanced diet that mainly consists of whole, natural foods is more important than scrutinizing individual meals and ingredients.

That being said, the recipe for these pumpkin granola bars contains wholesome ingredients. As with any treat, they shouldn’t be the main part of your diet. Don’t forget to eat your veggies, too!

Can you freeze these granola bars?

Yes, you can certainly freeze granola, and even these granola bars! Simply wrap them in wax paper and store in an air-tight Ziploc bag. You’ll want to bring these bars back to room temperature before eating them again. An hour on the counter should do the trick!

How else can you store these pumpkin granola bars?

These granola bars will stay fresh at room temperature for about five days, as long as you store them out of sunlight, and in an airtight container. These granola bars will get softer over time, which makes them even chewier!

Ingredients

Granola Bars
  • 1 c oats
  • 1/2 c puffed rice cereal
  • 1/2 c almonds
  • 1/2 c pecans
  • 1 tbsp chia seeds
  • 2 tbsp pepitas, optional
  • 1/4 c pumpkin puree
  • 1/4 c maple syrup
  • 1 tsp vanilla
  • 1 tbsp cinnamon
  • 1 tsp nutmeg
  • Pinch of salt and allspice
Chocolate Dip

Instructions

  1. Preheat oven to 325 F. Line an 8x8" baking dish with parchment paper, and set aside.
  2. Add all of the granola ingredients to the bowl of a food processor. Pulse just 2-3 times to bring the ingredients together. The granola may still be crumbly, and that's ok. We don't want to process it too much.
  3. Transfer the granola into the baking dish and press it into an even layer.
  4. Bake the granola for about 20 minutes, until the edges are lightly golden brown.
  5. Cool the granola completely on a wire rack. Cut into bars.
  6. To make the chocolate dip, melt the chocolate chips and coconut oil in the microwave, stopping to stir every 20s so the chocolate does not burn.
  7. Dip the granola bars in the chocolate dip, and place them chocolate-side-up on a sheet of parchment paper.
  8. Place the granola bars in the fridge for about 30 minutes to set.
