Strawberry Shortcake Rice Krispie Treats

These strawberry shortcake rice krispie treats are an even sweeter, yummier twist on classic Rice Krispies! This homemade recipe calls for all of the classic ingredients needed for homemade Rice Krispie treats like browned butter and melted marshmallows, and adds freeze dried strawberries and crushed shortbread cookies which are the KEY to making this a tasty treat.

Mixing freeze dried strawberries in with the Rice Krispies will give these homemade Rice Krispies a burst of strawberry flavor in every bite. You can find freeze dried strawberries in the dried fruits and nuts section at most grocery stores.

As for the shortbread cookies, I really love Pepperidge Farm’s Chessmen or Dublin shortbread cookies for this recipe. You can also use Nilla wafers if that’s more your jam. And, if you’re gluten free, you can even use a tasty gluten free shortbread cookie for this recipe, like THIS one from the Siete brand–they’re so good!

Ok, and here’s another cooking tip for your homemade strawberry rice krispie treats: as you melt the butter for this recipe, allow it to brown for a little bit for an extra depth of flavor! You want there to be small brown flecks of butter in the pan–that’s when you’ll know it’s ready to go.

Also, be sure to mix in a handful of whole mini marshmallows at the end just before you press the Rice Krispies into the pan so you get globs of marshmallows tastiness in every bite. Yum!

This one! Of course, you can leave the strawberries and the shortbread cookies out of this recipe and your classic rice krispie treats will still be super tasty.

My Strawberry Shortcake Rice Krispies recipe

The full recipe for these shortcake rice krispies is below, but here’s the gist of it:

  • Melt the butter in a large saucepan over medium heat. Brown the butter, stirring frequently, until it darkens to a golden color and starts to smell nutty.
  • Add in the vanilla, pinch of salt, and marshmallows. Stir together until the marshmallows are partially melted.
  • Turn off the heat, and add in the crispy rice cereal, freeze dried strawberries, and crushed cookies.
  • Add in the reserved marshmallows and stir until they are partially, but not completely melted.
  • Press the mixture into an even layer in the baking pan.
  • Optional: Drizzle melted marshmallow fluff on top.

How do you make these Rice Krispie treats?

It’s easy! All you need to do is melt the butter in a medium saucepan, and allow the butter to brown for a few minutes. Add a splash of vanilla and a pinch of salt to add an extra depth of flavor.

Now, add in the mini marshmallows and stir them into the butter until melted.

Pour in the crispy rice cereal along with the freeze dried strawberries and shortbread cookies, and stir until combined. Lightly press this mixture into an 8×8” pan and allow it to cool for about 1 hour before slicing into squares.

What is the ratio of rice krispies to marshmallows?

This strawberry Rice Krispies recipe uses 4 cups of Rice Krispies to 6 cups of mini marshmallows. One 10 oz bag of mini marshmallows contains about 6 cups.

When should I cut my Rice Krispie treats?

After pressing the mixture into the pan, allow your strawberry shortcake treats to cool to room temperature for about one hour. Then, you’ll be ready to cut them!

Are Rice Krispies gluten free?

Sadly, no, traditional Rice Krispies crispy rice cereal is not gluten free. Rice Krispies contain malt, which comes from barley and may contain gluten.

Are Rice Krispies vegan?

Yep! Fortunately, Rice Krispies are a vegan cereal. If you use vegan butter and vegan marshmallows for this recipe, then this recipe will be completely vegan, too.

Why are my Rice Krispie treats crunchy?

If you don’t correctly measure your butter-to-marshmallows-to-Rice Krispies ratio, this may result in Rice Krispie treats that are too dry or crunchy.

Also, stale mini marshmallows may not melt thoroughly, resulting in hard Rice Krispie treats. Be sure to measure everything correctly and use a brand new, fresh bag of mini marshmallows for this recipe.

How do you store Rice Krispie treats?

Once these homemade strawberry Rice Krispie treats are completely cooled and cut, wrap them in wax paper or parchment paper, and store in an airtight container at room temperature for about 3-5 days.

I doubt they won’t get gobbled up before that, though!

Ingredients

  • 6 tbsp unsalted butter use vegan butter if vegan
  • 10 oz mini marshmallows divided vegan marshmallow option linked above
  • 1/2 tsp vanilla extract
  • pinch of salt
  • 4 c crispy rice cereal
  • 1 c freeze dried strawberries crushed
  • 1/2 c shortbread cookies crushed
  • 1/4 c marshmallow fluff (optional) melted

Instructions

  • Line an 8×8″ baking pan with parchment paper Set aside.
  • Melt the butter in a large saucepan over medium heat. Brown the butter, stirring frequently, until it darkens to a golden color and starts to smell nutty (about 3-4 minutes).
  • Add in the vanilla, pinch of salt, and marshmallows (reserve 1c of marshmallows to the side). Stir together until the marshmallows are partially melted, about 2-4 minutes.
  • Turn off the heat, and add in the crispy rice cereal, freeze dried strawberries, and crushed cookies. Stir until evenly combined.
  • Add in the reserved 1 c of marshmallows and stir until they are partially, but not completely melted.
  • Press the mixture into an even layer in the baking pan.
  • Optional: Drizzle the melted marshmallow fluff on top.
  • Cool at room temperature for about one hour. Slice the strawberry shortcake rice krispie treats into bars. Enjoy!

    I’m a big fan of switching things up from a regular OG rice krispy treat so when I saw this recipe on Pinterest I had to try them. They taste similar to the strawberry shortcake ice creams bars I loved growing up! Definitely recommend and will be introducing them to all my friends!!
