Homemade Chocolate Chip Pizookie
There's something about the holiday season that makes me want to shovel food into my face by the skillet. The combination of cold weather, fuzzy socks, and oversized cardigans creates a coziness that makes me find any excuse to consume a ton of sugar. I've been craving cookies lately, but just one cookie wouldn't do.
I wanted a giant chocolate chip skillet cookie, and thus this beautiful pizookie is born.A pizookie is what happens when a pizza meets a cookie, meets a hungry girl with lots of butter and chocolate chips on hand. I could, theoretically, realistically, happily, eat this entire pizookie by myself and in one sitting, but my jeans were telling me to reconsider. So I invited a few friends over to celebrate the holiday season with Christmas movies, board games, and this chocolate chip pizookie.I think what sets this pizookie recipe apart from the rest is the browned butter.
It creates a richness in the cookie that melts on your tongue when you bite into it.This cookie must must must be served warm. If you don't eat it right out of the oven (how can you not?) then make sure you heat it up in the microwave before digging in. And top with a giant scoop of ice cream and chocolate sauce while you're at it. These are just the rules.
The next time I make this cookie, I'm thinking about going wild and adding in some mini peanut butter cups, maybe crushed Oreos, or brownie pieces. Say it with me: heaven!
Ingredients
1 cup Butter
1 cup Brown Sugar
½ cup Sugar
2 Eggs
1 teaspoon Vanilla
2 cups + 2 Tablespoons Flour
1 teaspoon Baking Soda
½ teaspoon Salt
¾ cup Milk Chocolate Chunks
¾ cup Semi-sweet Chocolate Chips
Vanilla Bean Ice Cream
Directions
Preheat oven to 325 degrees.
In a 10 or 12 inch cast iron skillet, melt butter over medium heat stirring often, until it starts to bubble and is completely melted. Turn heat to low and add sugar and brown sugar, stirring well. Keep stirring until smooth and glossy.
Chill in refrigerator for 10-15 minutes.
Remove from refrigerator and add eggs and vanilla and stir well.
Stir in flour, baking soda, and salt.
Mix in chocolate and stir to combine.
Bake at 325 degrees for 24-30 or until the edges are lightly golden brown. The inside will still be slightly gooey and that's the way it's meant to be.
Top with vanilla bean ice cream and eat warm.
