Vegan Black Bean Burritos
This is the best homemade black bean burrito recipe I’ve ever tried, and it also happens to be completely vegan! The vegan black bean burrito filing is packed with tasty veggies like black beans (obviously), mushrooms, bell peppers, and onion.

- 2 tbsp olive oil
- 4 oz mushrooms (chopped)
- 1 bell pepper (chopped)
- 1/2 onion (chopped)
- 2 cloves garlic (minced)
- 1 tbsp taco seasoning
- 1/4 c nutritional yeast
- salt (to taste)
- 1 can black beans (drained and rinsed)
- 1/2 bunch cilantro (chopped (optional))
- 1 lime
- 4-6 tortillas
Heat olive oil in a large skillet over medium heat.
Add in the mushrooms, bell pepper, onion, and garlic. Cook for 5 minutes, stirring occasionally.
Season the veggies with the taco seasoning, nutritional yeast, and additional salt (to taste).
Add in the black beans and cook for another 2-3 minutes, just until heated through. Remove from heat.
Stir in the chopped cilantro and lime juice.
Distribute the black bean burrito filling on the tortillas, and wrap them up to form a burrito.
When ready to serve, place the burritos in a hot pan, seam-side down, and heat until the outside gets crispy, about 1-2 minutes. Flip and repeat.
Serve with avocado, salsa, or my vegan queso dip!
