No Bake Peanut Butter Fudge Brownies

These healthy, no bake peanut butter fudge brownies are made with simple ingredients like Medjool dates, almond flour, cocoa powder, and peanut butter! Make these naturally sweetened, rich and fudgy brownies the next time you've got a chocolate craving. They last for days in the fridge and are healthier than what you buy in the store!

INGREDIENTS

No Bake Peanut Butter Brownies
  • 10 medjool dates
  • 1/2 c peanut butter (or another nut butter like almond butter)
  • 1/4 c almond flour
  • 1/4 c cocoa powder (see note)
  • 1 tsp vanilla extract
Chocolate Spread
  • 1 c dark chocolate chips
  • 1/4 c Greek yogurt
Optional Toppings
  • 1/4 c peanut butter (or other nut butter)
  • Chopped nuts (like walnuts or almonds)

INSTRUCTIONS

No Bake Peanut Butter Brownies
  • Line a loaf pan with parchment paper, and set aside.
  • Add all of the Brownie ingredients to a food processor or blender, and blend for about 1-2 minutes to create a thick batter similar to cookie dough. The batter may be crumbly.
  • Spoon the dough into the loaf pan, pressing it down firmly so the top is flat. Place the pan in the fridge to chill while you work on the Chocolate Spread.
Chocolate Spread
  • Melt the chocolate chips in the microwave or using a double boiler until smooth.
    If using a microwave, stop to stir the chocolate chips every :15 seconds to prevent them from burning.
  • Cool the melted chocolate slightly, and then stir in the Greek yogurt. It will look chunky at first, but keep stirring until the mixture is uniform and smooth.
  • Spoon the Chocolate Spread on top of the Peanut Butter Brownie, smoothing the top so it's flat.
  • Optional: When ready to serve, slice into bars or squares and top with additional peanut butter, or chopped nuts.
  • Store leftovers in an airtight container in the fridge for up to 5 days.

Notes

I recommend using Dutch processed cocoa for the darkest colored brownies!
Make sure to pick a peanut butter with no added sugar or oils. The ingredients should be just peanuts, or peanuts + salt.
