Key Lime Pie Bread

If you like key lime pie and banana bread, than this drool-worthy key lime pie bread is just the recipe for you! This is a tender, flavorful loaf that takes the delicious summer flavors of key limes and turns it into a fresh bread.

INGREDIENTS

  • 1/2 c butter (softened)
  • 3/4 c brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tbsp key lime zest (about 4 key limes)
  • 2 tbsp key lime juice (about 3 key limes)
  • 1/2 c buttermilk*
  • 1 1/2 c flour
  • 3/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
Key Lime Glaze
  • 1/2 c powdered sugar
  • 2 tbsp key lime juice (about 3 key limes)

INSTRUCTIONS

  • Preheat oven to 350 F degrees.
  • Beat the butter and sugar together in a medium bowl until whipped and fluffy.
  • Add eggs one at a time, beating after each addition.
  • Add the key lime zest, juice, vanilla, and buttermilk, and mix until combined.
  • Sift together the flour, baking soda, baking powder and salt. Mix it into batter.
  • Pour the batter into a loaf pan, and bake for 45-50 minutes, until toothpick inserted comes out clean.
  • Meanwhile, combine the ingredients for the glaze.
  • Cool the bread completely before topping with the key lime glaze.

Notes

*If you don't have any buttermilk on hand, use regular milk or non-dairy milk instead. The bread will still come out perfect! Or, you can add 1 tbsp of apple cider vinegar to your regular milk and mix it together for a quick buttermilk alternative.
