INGREDIENTS

  • 1 c fresh fruit (peeled and chopped)
  • 2-3 tbsp apple juice
  • 2-4 tbsp honey or maple syrup
  • 3 tbsp gelatin

INSTRUCTIONS

  • Start out by rinsing and peeling your fruit. Discard the peel and chop the fruit into small pieces.
  • Place the fruit and apple juice in a food processor and blend until completely smooth.
  • Taste the fruit puree and add honey (or maple syrup) if it needs more sweetness. Blend again.
  • Pour the fruit puree into a small saucepan and sprinkle 3 tbsp of gelatin on top. Whisk together until the gelatin disappears.
  • Turn on the stove to medium and heat the fruit puree until it just starts to simmer on the edges. Stir often, making sure it does not burn. You do not want the fruit to boil, but it should start to simmer (this may take 2-4 minutes depending on your stove).
  • Pour the fruit puree into the silicone mold and place in the fridge for about 2 hours, preferably overnight. Pop the fruit jelly out of the mold and store in an airtight container in the fridge for up to 3 days.

Notes

  • Before starting this recipe make sure you have a food processor or a blender handy.
  • You may also want to use a silicone mold so that the gummies can be enjoyed individually. However, you could also simply use a loaf pan or glass container and cut the fruit mixture into individual gummies, if preferred.
