Homemade Ferrero Rocher
Making Ferrero Rocher at home is easier than you think! This vegan version of that classic chocolate hazelnut candy perfectly satisfies a chocolate craving. Bonus: this chocolate recipe is refined sugar free and gluten free, too!

- 1 c hazelnuts (+ 1/2 c chopped hazelnuts, for topping)
- ½ c cocoa powder
- 1 tsp vanilla
- 1/4 c maple syrup
- Pinch of salt
- 1 c sugar-free chocolate chips (melted)
Place 1 c hazelnuts in a food processor, and blend for 2-3 minutes until it forms a paste. Save the extra 1/2 c chopped hazelnuts for topping.
Add in the cocoa powder, vanilla extract, maple syrup, salt, and blend until the ingredients come together, about 15-30 seconds. The mixture should be slightly sticky, but not dry. If it is dry, add a little bit more maple syrup.
Pinch about 1 tbsp balls from the dough. Roll each ball through the chopped hazelnuts, being sure to press them in so they stick.
Refrigerate the balls for an hour until hardened.
Once hardened, dip each ball in the melted chocolate. Sprinkle with any leftover chopped hazelnuts, and place in the fridge again for an hour, until hardened.
