Homemade Ferrero Rocher

Making Ferrero Rocher at home is easier than you think! This vegan version of that classic chocolate hazelnut candy perfectly satisfies a chocolate craving. Bonus: this chocolate recipe is refined sugar free and gluten free, too!

INGREDIENTS

  • 1 c hazelnuts (+ 1/2 c chopped hazelnuts, for topping)
  • ½ c cocoa powder
  • 1 tsp vanilla
  • 1/4 c maple syrup
  • Pinch of salt
  • 1 c sugar-free chocolate chips (melted)

INSTRUCTIONS

  • Place 1 c hazelnuts in a food processor, and blend for 2-3 minutes until it forms a paste. Save the extra 1/2 c chopped hazelnuts for topping.
  • Add in the cocoa powder, vanilla extract, maple syrup, salt, and blend until the ingredients come together, about 15-30 seconds. The mixture should be slightly sticky, but not dry. If it is dry, add a little bit more maple syrup.
  • Pinch about 1 tbsp balls from the dough. Roll each ball through the chopped hazelnuts, being sure to press them in so they stick.
  • Refrigerate the balls for an hour until hardened.
  • Once hardened, dip each ball in the melted chocolate. Sprinkle with any leftover chopped hazelnuts, and place in the fridge again for an hour, until hardened.
