This healthy sticky toffee pudding recipe is made with wholesome ingredients like softened medjool dates, oat flour, and olive oil. 1black tea bag, or 1 tbsp loose black leaf tea in a tea infuser(optional)
Sticky Toffee Pudding Cake
1egg(room temperature)
1/4colive oil
1/2ccoconut sugar
1tspvanilla extract
1 1/2coat flour
1tspbaking powder
1/2tspcinnamon
Pinchof salt
Simple Caramel Sauce
1/2calmond butter(well-stirred and drippy)
1/2cmaple syrup(or honey)
1tspvanilla extract
2-4tbspnon-dairy milk(optional)
INSTRUCTIONS
Softened Dates
Place the chopped dates in a heat-proof bowl.
Sprinkle the baking soda on top of the dates, and then pour the boiling water over the dates (it will start to foam).
Give everything a light stir.
Optional: Place the black tea bag or tea infuser in the bowl, making sure it's submerged beneath the water.
Let sit for 10 minutes.
Remove the tea, if using.
Sticky Toffee Pudding Cake
Preheat the oven to 350 F. Line an 8x8 baking pan with parchment paper, and set aside.
In a large bowl, mix together the egg, olive oil, coconut sugar, and vanilla with a spoon or spatula until everything is smooth and fully incorporated.
Pour in the softened date mixture (including the water).
Add in the oat flour, baking powder, cinnamon, and a pinch of salt, and gently fold the dry ingredients into the wet ingredients until smooth.
Pour the batter into the baking pan, smoothing down the top so it's flat.
Bake for 25-30 minutes, until the cake is golden brown and a toothpick inserted in the center comes out clean.
Transfer to a wire baking rack to cool.
Meanwhile, prepare the caramel sauce.
Simple Caramel Sauce
Stir all ingredients together in a medium bowl until smooth. If the caramel is too thick, add a splash of milk and mix again until the desired consistency is reached.
Serve
Slice the cake, and serve with caramel sauce poured over the cake slices. Best served with ice cream, and additional caramel sauce!
