This healthy sticky toffee pudding recipe is made with wholesome ingredients like softened medjool dates, oat flour, and olive oil. INGREDIENTS

Softened Dates
  • 6 medjool dates (pitted and chopped)
  • 1 tsp baking soda
  • 1 c boiling water
  • 1 black tea bag, or 1 tbsp loose black leaf tea in a tea infuser (optional)
Sticky Toffee Pudding Cake
  • 1 egg (room temperature)
  • 1/4 c olive oil
  • 1/2 c coconut sugar
  • 1 tsp vanilla extract
  • 1 1/2 c oat flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch of salt
Simple Caramel Sauce
  • 1/2 c almond butter (well-stirred and drippy)
  • 1/2 c maple syrup (or honey)
  • 1 tsp vanilla extract
  • 2-4 tbsp non-dairy milk (optional)

INSTRUCTIONS

Softened Dates
  • Place the chopped dates in a heat-proof bowl.
  • Sprinkle the baking soda on top of the dates, and then pour the boiling water over the dates (it will start to foam).
  • Give everything a light stir.
  • Optional: Place the black tea bag or tea infuser in the bowl, making sure it's submerged beneath the water.
  • Let sit for 10 minutes.
  • Remove the tea, if using.
Sticky Toffee Pudding Cake
  • Preheat the oven to 350 F. Line an 8x8 baking pan with parchment paper, and set aside.
  • In a large bowl, mix together the egg, olive oil, coconut sugar, and vanilla with a spoon or spatula until everything is smooth and fully incorporated.
  • Pour in the softened date mixture (including the water).
  • Add in the oat flour, baking powder, cinnamon, and a pinch of salt, and gently fold the dry ingredients into the wet ingredients until smooth.
  • Pour the batter into the baking pan, smoothing down the top so it's flat.
  • Bake for 25-30 minutes, until the cake is golden brown and a toothpick inserted in the center comes out clean.
  • Transfer to a wire baking rack to cool.
  • Meanwhile, prepare the caramel sauce.
Simple Caramel Sauce
  • Stir all ingredients together in a medium bowl until smooth.
    If the caramel is too thick, add a splash of milk and mix again until the desired consistency is reached.
Serve
  • Slice the cake, and serve with caramel sauce poured over the cake slices. Best served with ice cream, and additional caramel sauce!
