Healthy Homemade Cereal Bars
These homemade cereal bars are a healthy alternative to store bought cereal bars. All you need are a few simple ingredients to make these easy no bake cereal bars!

- 3 c cereal (I used Three Wishes cereal)
- 10 pitted dates (softened* and mashed into a paste)
- 1/4 c nut butter (like almond butter)
- 1/4-1/2 c non-dairy milk
- 1 tsp vanilla
- 1/2 tsp salt
- 1 tbsp coconut oil
- 2 c sugar-free or regular chocolate chips
Line an 8”x8” baking pan with wax paper or parchment paper. Set aside.
Pour your cereal into a large bowl. I like to lightly crush up some pieces, but you can leave them whole.
Add the remaining ingredients–except the chocolate–to a saucepan on medium heat. Lightly mash them everything together as you stir it so that a smooth syrup paste, about 3-4 minutes. The paste will thicken as it cooks, so add a splash more non-dairy milk if needed to keep it smooth.
Pour the syrup into the cereal. Mix until the cereal pieces are all coated in the syrup.
Transfer the cereal to the cake pan and press into a single layer. Set aside.
Melt the chocolate in the microwave by heating it up at 15-20 second intervals, stopping to stir each time.
Once the chocolate is melted, pour it over the cereal and smooth it into a thin layer.
Freeze the cereal for at least 1 hour, until set.
Slice and serve your cereal bars!
