Healthy Carrot Cake Loaf with Cream Cheese Frosting
Here's how to make a moist, naturally sweetened carrot cake loaf using mashed banana, shredded carrots, Greek yogurt, and the flour of your choice. Finished with a light and easy cream cheese frosting, this delicious carrot cake recipe is perfect for breakfast, snacking, or dessert!

Carrot Cake Loaf- 2 ripe bananas (mashed, about 400 g)
- 1/2 c maple syrup
- 1/4 c olive oil
- 2 eggs (room temperature)
- 3/4 c carrot (shredded, about 75 g)
- 1 tsp vanilla extract
- 1/4 c Greek yogurt
- 2 c flour (can use all purpose, oat flour, or 1:1 gluten free flour)
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tsp baking soda
- 1/2 tsp baking powder
- Pinch of salt
- 1/2 c walnuts (roughly chopped)
- 1/2 c golden raisins
Cream Cheese Frosting- 8 oz cream cheese (softened)
- 1/4 c Greek yogurt
- 3 tbsp maple syrup
- 2 tsp vanilla bean paste (or vanilla extract)

Carrot Cake LoafPreheat oven to 350 degrees. Line a loaf pan with parchment paper, and set aside.
In a large bowl, use a large fork or wooden spoon to mix together the mashed banana, olive oil, and maple syrup.When mashing the banana, I find that a potato masher works great for this step! Add the eggs, and mix in until fully incorporated. Then, mix in the shredded carrot and vanilla.
Now, gently fold in the Greek yogurt until no streaks of yogurt remain.
Sift in the flour, cinnamon, nutmeg, baking soda, baking powder, and salt. Mix gently until just incorporated, with a few streaks of flour still visible.
Fold in the walnuts and raisins until no streaks of flour remain. The batter will be thick.
Transfer the batter into the loaf pan, smoothing the top so it’s flat.
Bake for 50 minutes to 1 hour, until a toothpick inserted in the center comes out clean.
Cool completely on a wire rack.
Cream Cheese FrostingIn the bowl of a stand mixer, beat the cream cheese, Greek yogurt, vanilla, and maple syrup until fluffy, about 2-3 minutes. You may want to start with the lesser amount of maple syrup, and add more to your desired sweetness. Spread the cream cheese frosting on top of the carrot cake loaf, and enjoy!
