Yield6 donuts
Donuts- 1 c flour (can sub gluten free flour)
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/3 c milk (can sub non-dairy milk)
- 1 egg (room temperature)
- 3 tbsp coconut oil (melted)
- 1/2 c coconut sugar
- 1 tsp vanilla extract
Cinnamon Sugar- 2 tbsp cane sugar
- 1/2 tsp cinnamon
DonutsPreheat oven to 425 F. Lightly grease a donut pan with cooking spray and set aside.
In a large bowl, combine the flour, baking powder, and cinnamon.
In a medium bowl, whisk together the milk, egg, coconut oil, coconut sugar and vanilla.
Pour the wet ingredients into the dry ingredients, and stir the mixture together until fully incorporated. Be careful not to overmix.
Using a piping bag, or a spoon, carefully divide the batter into the donut pan, filling the tins about 3/4 of the way.
Bake for about 8-10 minutes, until a toothpick inserted in the center comes out clean.
Cool donuts on a wire rack.
Cinnamon SugarIn a small bowl, combine the cane sugar and the cinnamon
Dip each donut in the cinnamon sugar mixture, turning them over and coating them on all sides. I find it helps to sprinkle the cinnamon sugar on the donuts too to help them adhere.
*Gluten Free Variation: Use gluten free flour, my favorite comes from the brand King Arthur!
*Vegan Variation: Replace the egg with a flax egg (which is just 1 tbsp ground flaxseeds + 2.5 tbsp water, mixed and rested for 5 minutes). Also be sure to use non-dairy milk.
*100% Refined Sugar Free Variation: Use coconut sugar in place of cane sugar for the cinnamon sugar topping.
