Easy Orange Muffins Recipe

These healthy orange muffins are made with simple, wholesome ingredients like almond flour, coconut oil, and maple syrup for a gluten-free, naturally sweetened treat that you're going to love! INGREDIENTS

Healthy Orange Muffins
  • 1/3 c coconut oil (melted)
  • 2/3 c maple syrup (or honey)
  • 4 eggs (room temperature)
  • 2 tbsp orange juice
  • 1 tbsp orange zest
  • 1 tsp vanilla
  • 2 1/2 c almond flour
  • 1 tsp baking soda
  • pinch of salt
Sliced Orange Topping (optional)
  • 2-3 mandarin oranges* (peeled of their skin and pith, and sliced into thin circles)

INSTRUCTIONS

  • Preheat oven to 350 F. Place 10 standard muffin liners inside a muffin pan. Set aside.
  • In a large bowl, whisk together the coconut oil, maple syrup, eggs, and vanilla until smooth.
  • Pour in the fresh orange juice and orange zest, and whisk again.
  • Add in the almond flour, baking soda, and salt. Mix into a smooth batter.
  • Using a large spoon or cookie scoop, divide the batter evenly between the muffin liners, filling them mostly to the top.
  • Gently press the sliced mandarin oranges on top of the muffin batter.
  • Bake the muffins for 20-25 minutes, until the surface is lightly golden brown and firm to the touch.
  • Remove the muffins from the oven and cool on a wire rack.
  • Store in an airtight container at room temperature for 1-2 days, or in the fridge for up to 5 days.

Notes

*Separate the circles so that you have a variety of sliced halves, quarters, and whole pieces to use as toppings!
