These homemade milk and cereal bars are the perfect no-bake snack or dessert! Layered with crunchy cereal and a creamy filling, these easy to make cereal bars are a great breakfast meal prep treat.
Pour the cereal of your choice into a large bowl. I went with a Cinnamon Toast cereal. Set aside.
In a small saucepan, bring the coconut oil, almond butter, maple syrup, and butter over medium heat to a gentle simmer. Remove from heat and stir in the cinnamon and vanilla.
Pour the melted almond butter mixture on top of the cereal. Use a spoon or spatula to mix it all together until the cereal is coated.
"Milk" Layer
Whisk all of the ingredients together in a medium bowl.
Cereal Bars
To assemble, scoop half of the cereal mixture into the bottom of the loaf pan. Spread it into an even layer.
Next, spread the greek yogurt mixture on top of the cereal in an even layer.
Top with the remaining cereal mixture, and spread it so that the greek yogurt is covered. Lightly pat it in so that it adheres.
Pop the loaf pan into the freezer and freeze until solid, about 2 hours.
Slice into bars, and store in an airtight container in the freezer for up to 2 weeks.
