Cinnamon Toast Crunch Milk and Cereal Bars Recipe

These homemade milk and cereal bars are the perfect no-bake snack or dessert! Layered with crunchy cereal and a creamy filling, these easy to make cereal bars are a great breakfast meal prep treat.

INGREDIENTS

Cereal Layer
  • 3 c cereal (choose one that is high quality!)
  • 2 tbsp coconut oil
  • 2 tbsp almond butter
  • 2 tbsp maple syrup
  • 1 tbsp butter (sub: vegan butter)
  • Pinch of cinnamon
  • Pinch of vanilla
"Milk" Layer
  • 1 c greek yogurt (unflavored, unsweetened)
  • 3 tbsp condensed milk (sub: oat milk condensed milk)
  • 1 tsp vanilla bean paste (sub: vanilla extract)

INSTRUCTIONS

  • Line a loaf pan with parchment paper. Set aside.
Cereal Layer
  • Pour the cereal of your choice into a large bowl. I went with a Cinnamon Toast cereal. Set aside.
  • In a small saucepan, bring the coconut oil, almond butter, maple syrup, and butter over medium heat to a gentle simmer. Remove from heat and stir in the cinnamon and vanilla.
  • Pour the melted almond butter mixture on top of the cereal. Use a spoon or spatula to mix it all together until the cereal is coated.
"Milk" Layer
  • Whisk all of the ingredients together in a medium bowl.
Cereal Bars
  • To assemble, scoop half of the cereal mixture into the bottom of the loaf pan. Spread it into an even layer.
  • Next, spread the greek yogurt mixture on top of the cereal in an even layer.
  • Top with the remaining cereal mixture, and spread it so that the greek yogurt is covered. Lightly pat it in so that it adheres.
  • Pop the loaf pan into the freezer and freeze until solid, about 2 hours.
  • Slice into bars, and store in an airtight container in the freezer for up to 2 weeks.
