Applesauce Bread- 2/3 c brown sugar
- 4 tbsp unsalted butter (room temperature)
- 1 c unsweetened applesauce
- 1 egg (room temperature)
- 1 tbsp vanilla
- 1 c gluten free flour (I LOVE this brand)
- 3/4 tsp baking soda
- 1/4 tsp baking powder
- 1/2 tsp salt
Pecan Streusel- 1/2 c pecans
- 2 tbsp white sugar
- 1/2 tsp cinnamon
Applesauce BreadPreheat oven to 350 degrees. Line a loaf pan with parchment paper and set aside.
Prepare the pecan cinnamon streusel by pulsing all ingredients together in a food processor, or by chopping the ingredients together finely with a knife. Set aside.
Cream the butter and sugar together in a large bowl. Add the applesauce and mix together with a spatula or spoon.
Add the egg and vanilla, and mix until combined.
Sift the gluten free flour, baking soda, baking powder and salt into batter. Mix until smooth.
Pour half of the batter into the loaf pan. Sprinkle half of the pecan cinnamon streusel on top of the batter. Pour the remaining batter into the pan and sprinkle the remaining streusel on top of the bread batter.
Bake the applesauce bread for 45-55 minutes, until toothpick inserted in the center comes out clean. Cool completely, or enjoy warm.
Store the remaining bread in an airtight container on the counter for 2-3 days.
