Few things in life make me happier than a big ‘ol cookie. It’s even better than a dozen cookies because there’s no long-term commitment. One of my favorite things to do on a Friday night after work is to whip up a quick single serve cookie treat, and my favorite type lately has been this monster oatmeal cookie with a Nutella center. Yum and yum.
I think I love this cookie recipe so much because it makes a huge, soft cookie with a chewy middle that melts in your mouth. I’ve always been a fan of softer cookies versus crispy cookies (although thin crispy cookies are something that I can get behind) so if you’re also on team #softcookies you’ll really like where I’m going with this.
Just for fun, I also added a dollop of Nutella in the middle of the cookie and rainbow sprinkles to portray visually the joy I felt in my heart when I made this. Twas a great addition, and I know you’ll feel the same way once you try it. This cookie recipe is calling your name, enjoy it!
- 2 TBS butter, melted
- 1/4 c brown sugar
- 1 Tbsp whisked egg
- 1/4 c all-purpose flour
- 1/4 c quick oats
- 1/8 tsp baking soda
- 1/8 tsp cinnamon
- 1 pinch salt
- 1 TBS Nutella (optional)
- Preheat oven to 350 degrees.
- Add butter, brown sugar, 1 TBS egg, flour, oats, baking soda, cinnamon and salt to a bowl. Quickly stir until well blended.
- Shape dough into a 3 1/2-inch disk on a Silpat or parchment paper lined baking sheet. Bake in preheated oven 13 - 15 minutes until edges are golden but center is still soft.
- Take out of the oven and immediately place Nutella on the center of the cookie. Use a spoon to press it in gently and spread it around the center. Allow cookie to cool for a few minutes, and enjoy.
