Vegan (!) Caesar Salad Dressing

My love for salads has grown exponentially since living in L.A. I must admit that before making my way West I rarely ever ate salads, because they are usually bland, boring bowls of sadness without any real flavor to keep me coming back for more. But the salad scene out here is crazy hot, with many yummy choices like Sweetgreen and Tender Greens taking away alll my money each and every month.

Caesar salad is definitely my favorite of the salad categories, and I’ve been eating so much of Sweetgreen’s Kale Caesar Salad lately that I just had to take the more cost-effective route and make it myself. This homemade Caesar Salad Dressing that I whipped up is not only delicious but also dairy-free and vegan! I’m really proud of this one because it’s crazy good, and tastes even better than traditional Caesar dressing in my opinion.

Before I discovered my love for Caesar dressing, Thousand Island dressing was my one and only love. No, it’s not healthy, but yes it’s the perfect way to make any plain salad taste like a decadent main dish. Lesson learned – if you have to drown a salad in salad dressing then the base is all wrong to begin with.

When I make my homemade salads, I always make sure they follow this formula = dark, leafy greens + protein + veggies = the foundation for the perfect salad. Adding in additional deliciousness like nuts and grains is always a plus, too. And don’t forget the non-dairy cheese sprinkles, which is also included in this recipe. It’s kinda important since it adds that cheesy, nutty texture that makes salads so great.

As for other salad dressings, I love a simple oil + vinegar mixture but when I’m in the mood for more flavor this vegan Caesar dressing always comes through. You can make it in less than 5 minutes, it’s seriously that easy. While you’re at it, check out these other salad recipes from the archives:

Vegan (!) Caesar Salad Dressing Recipe

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Ingredients

    Vegan Caesar Salad Recipe
  • 1/2 c nuts, raw or roasted, soaked overnight (I used a mixture of cashews, almonds, brazil nuts, hazelnuts - just what I had on hand at the time)
  • 1/4 c water
  • 2 tbsp olive oil
  • 1/2 tbs Dijon mustard
  • 1/2 tsp garlic powder
  • 1-3 cloves of fresh garlic
  • 1/2 tbsp soy sauce
  • 2 tsp nonpareil capers
  • 1/2 tsp salt
  • 1/2 tsp pepper
    Vegan Cheese Sprinkles
  • 1/3 c nuts, raw or roasted
  • 1-3 cloves of fresh garlic
  • 1 tbsp nutritional yeast
  • 1 tbsp oliver oil
  • 1/2 tsp garlic powder
  • 1 pinch of salt

Instructions

    Vegan Caesar Salad Recipe
  1. Blend all ingredients in a food processor until smooth and creamy, about 1 minute. Refrigerate, covered, for up to 3 days.
    Vegan Cheese Sprinkles
  1. Pulse all ingredients together in a food processor until the mixture forms small crumbs. Store in an airtight container in the refrigerator for up to a week.
  2. Add these ingredients to your next homemade salad! I like to make mine with kale, spinach, arugula, sun dried tomatoes, avocado, and grilled chicken.
